Description

This Mango Avocado Feta Salad is a refreshing, colorful dish that combines sweet mango, creamy avocado, and tangy feta with herbs and a zesty lemon dressing. Ready in 10 minutes, it’s light, nutritious, and perfect for summer meals or gatherings.

Ingredients

Scale
  • 2 ripe mangoes, peeled and cubed
  • 2 ripe avocados, cubed
  • 1/2 cup feta cheese, crumbled
  • 1/2 small red onion, thinly sliced
  • 1 small cucumber, diced
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • Salt and black pepper, to taste

Instructions

  1. In a large bowl, combine mango, avocado, cucumber, red onion, and parsley.
  2. In a small dish, whisk olive oil, lemon juice, salt, and black pepper.
  3. Pour the dressing over the salad and gently toss to combine.
  4. Sprinkle crumbled feta cheese on top.
  5. Serve immediately for best flavor and freshness.

Notes

  • For extra crunch, add toasted nuts or seeds.
  • Use lime juice instead of lemon for a sharper flavor.
  • Best served fresh, but you can prep ingredients (except avocado) a few hours in advance.
