Limoncello cake combines soft texture with a citrus zing. It’s moist, tender, and bursting with lemony goodness—perfect with tea or coffee.

Ingredients

  • 1 cup unsalted butter
  • 2 cups sugar
  • 3 eggs
  • 1/4 cup limoncello
  • 3 cups flour
  • 1 cup milk
  • 2 teaspoons baking powder
  • Zest of two lemons

Instructions

  1. Cream butter and sugar until fluffy, then add eggs one by one.
  2. Pour in the limoncello and mix well.
  3. Mix flour, baking powder, and lemon zest. Alternately add dry ingredients and milk to the batter.
  4. Pour into a greased cake pan and bake at 350°F (175°C) for 35-40 minutes.
  5. Let cool, then finish with a simple glaze made with powdered sugar and limoncello.

  • The glaze can be adjusted for sweetness or tanginess.
