Ingredients

- 2 tbsp paprika
- 2 tbsp brown sugar
- 1 tbsp salt
- 1 tsp black pepper

- Wood chips: hickory or apple
Instructions
- Mix paprika, brown sugar, salt, pepper, and optional spices to make a dry rub.
- Apply the rub evenly over the pork belly and let it sit for several hours.
- Preheat your pellet grill to low heat (225–250°F / 107–120°C).
- Place pork belly on the grill using indirect heat, add wood chips for smoke.
- Cook slowly for 4–5 hours until meat is tender and fully infused with smoky flavor.
- Remove from grill, let rest for 10 minutes, then slice or serve whole.
