Ingredients

  • 1 cup (240 ml) heavy cream
  • 1/2 cup (115g) unsalted butter
  • 1 1/2 cups (150g) freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: pinch of nutmeg
  • Fresh parsley, chopped for garnish
  • 400g fettuccine or your favorite pasta


Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Reserve 1 cup pasta water and drain.
  2. In a large skillet over medium heat, melt butter. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Pour in heavy cream, stir, and bring to a gentle simmer for 5 minutes to thicken slightly.
  4. Whisk in Parmesan cheese gradually until melted and smooth. Add reserved pasta water as needed.
  5. Season with salt, pepper, and nutmeg. Taste and adjust as desired.
  6. Add drained pasta to sauce. Toss to coat evenly.
  7. Serve immediately, garnished with parsley and extra Parmesan.
