Ingredients
- 1 cup (240 ml) heavy cream
- 1/2 cup (115g) unsalted butter
- 1 1/2 cups (150g) freshly grated Parmesan cheese
- 2 cloves garlic, minced
- Salt, to taste
- Freshly ground black pepper, to taste
- Optional: pinch of nutmeg
- Fresh parsley, chopped for garnish
- 400g fettuccine or your favorite pasta
Instructions
- Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Reserve 1 cup pasta water and drain.
- In a large skillet over medium heat, melt butter. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Pour in heavy cream, stir, and bring to a gentle simmer for 5 minutes to thicken slightly.
- Whisk in Parmesan cheese gradually until melted and smooth. Add reserved pasta water as needed.
- Season with salt, pepper, and nutmeg. Taste and adjust as desired.
- Add drained pasta to sauce. Toss to coat evenly.
- Serve immediately, garnished with parsley and extra Parmesan.
